So... I have had a couple baggies of chia seeds (whole, and ground up) for a while... And I have no idea what to do with them... What do you use chia seeds for? I am worried about using them in smoothies or something, cause I have heard that they will turn it all gel like:scratch

We put them in smoothies, no problemo! The gel thing only happens if the smoothies sit around for awhile. I usually make enough for dc and I, with extra to freeze. The ones for freezing go in the freezer immediately. I've never noticed a gel like texture on those once they are taken out and eaten (but they are usually eaten frozen or "icy").

I think of them sort of like flax -- could they be baked into muffins or mixed in pancakes?

I have not made muffins (or smoothies:blush) lately, but I have been tossing a handful in with my pancake batter:yes

I add them to bread, smoothies, yogurt, muffins, cookies... Love them!

I love chia seeds. I let them gel & 'drink' as a snack almost every day. We call it a science project. :giggle
