I found some GF cookie recipes with nut butters as the base. In particular most call for almond butter, but if I make these often it gets very expensive!!! The jar of almond butter we buy cost at least $4.50 sometimes it may be $4 if I get it on sale. But that is alot when the I use the whole jar and it only makes about 30 cookies. They go so fast! But I love them and it help me stay GF when I have a nice treat like this. Can anyone give me some tips for making my own almond butter?

I make peanut and almond. I have read that if you let the food processor run for about 10 to 15 minutes, you do not have to add oil, at least for the almond butter.

I make enhanced almond butter, and unenhanced peanut and cashew butter all the time.

FOr almond butter, I use 1-2 cups almonds, ground in a coarse "flour" in the vitamix. Then, I add maybe 1/4 cup coconut oil, 2 Tbs. honey, a little celtic sea salt. YUMMY.
