DH and I went a little crazy when we saw organic canned pumpkin in Walmart, so I'm on the hunt for something to do with it. DH wants some pumpkin custard, so if anyone has a loved recipe for that and wants to share :rockon.
Any suggestions/recipes?

These are awesome, you can use coconut oil instead of shortening.

Pumpkin Rolls, but they are so not anywhere near healthy!

On my blog, I just posted a Butternut Squash Polenta. However, usually, I used canned pumpkin. You can make the recipe as it is written, substituting a 15 oz can of pumpkin. My kids love it. I usually serve it with pork chops, grilled chicken, or even steak. I think topping it with some roasted, seasoned pumpkin seeds would be nice, too.

Curried Pumpkin Coconut Soup:


1/4 c butter
1 c onion, chopped
1 clove garlic, crushed
1 tsp curry powder
1/2 t salt
1/4 tcrushed red pepper (or pinch cayenne, which is what I use)
3 c chicken broth (could use veggie to make it vegitarian)
1 3/4 c pureed cooked pumpkin (i use canned)
1 c coconut milk

Saute onions and garlic in butter, add spices and saute a minute or two more. Add broth, simmer 15-20 minutes. Stir in pumpkin and coconut milk. Blend with immersion blender, or in batches in a regular blender until smooth and creamy. Eat.

pumpkin chocolate chip cookies

just last week tried a new recipe for black bean pumpkin soup - it sounded odd and looked less than fabulous but tasted AMAZING. I'll def. make it again.

no time now but lmk if you want any recipes.

mine didn't look as pretty as hers. but it was FABULOUS. seriously, I just ate some for lunch today. her description is dead on (this is one of my favorite food blogs - she's such a great writer and photographer besides a fabulous cook!).

my modifications:
1/2 butter, 1/2 coconut oil
red wine vinegar instead of Sherry vinegar
didn't bother with any garnish
omitted black pepper (I hate the stuff)
used the whole can of tomatoes, drained, rather than measuring out a cup

I just saw this...and realize I didn't respond back when this was originally posted. :blush

But...here is my pumpkin custard recipe. :yum

3 eggs
1/2 C white sugar
1/2 C brown sugar
2 T flour
1/2 tsp salt
1/2 tsp nutmeg
1/2 tsp allspice
1 tsp cinnamon
1-16oz can pumpkin
1 1/2 C milk

The easy way...throw all the ingredients into your blender and blend until well mixed. Pour into a large greased backing dish. Bake for 1 hour at 375F, or until a knife inserted into the middle comes clean.

This is great served warm with a scoop of ice cream, or cold the next day for breakfast! ;)

Karisa, that is TOO funny: I JUST prepared 2 pumpkins, and DH was asking for pumpkin custard!! I was going to make it tomorrow, after I found a recipe!!
Now I don't have to look for one! :lol

I haven't looked through the replies so the first may be here already. The other two are my creations:D

Starbucks Pumpkin Spice Latte (Copycat)

3 tablespoons canned pumpkin
2 tablespoons vanilla-flavored syrup (I used Torani)
1/4 teaspoon pumpkin pie spice
1 cup milk
3 ounces espresso (1-2 shots)

In a small saucepan, stir pumpkin puree into milk. Add vanilla syrup and pumpkin pie spice. Heat gently, continuing to stirring occasionally just until steaming and foam begins to appear. Pour pumpkin flavored milk into a tall mug and pour espresso over. Top with whip cream and a dash of pumpkin pie spice.


PUMPKIN SMASHED TATERS

~2 lbs red potatoes, unpeeled, cubed
1 can pumpkin
Butter
Salt
Cream
Parsley flakes
Green onions

Boil potatoes until tender. Drain. Mash with pumpkin, butter, salt, cream and parsley. Top servings with green onions.

CREAMY PUMPKIN PASTA

12-16 oz whole wheat penne
4 c. rice milk
1/2 cornstarch
1 cup canned pumpkin
Cream (1/3-1/2 c?)
Salt

Cook pasta according to package directions. Drain and return to pot.

While pasta is cooking, make sauce. Heat 3 cups of rice milk over medium heat until hot. Mix cornstarch into remaining rice milk, whisking until smooth. Slowly whisk cornstarch mixture into hot rice milk. Cook over medium heat until thickened. Add pumpkin and cream and salt to taste. Heat.

Mix sauce into pasta.

*I made this once with pumpkin pie spices in it. It was a hit!

This sounds wonderful! I think I am going to try to make some this week. I wish my family ate more though, I always end up having to throw away half a pan of anything. Sometimes I think I just need to have more kids to eat up the nummy food!! Haha

IDK, theres a lot of oil and sugar in them. You might not want them to eat alot.;)

Can you freeze some or give them to a neighbor?

yep, when i bake a large batch of something I always freeze half of it. but that is so that we *don't* eat all of it :shifty because we would. in much less time then it took to bake it :shifty

NUTTY PUMPKIN WAFFLES

2 cups all-purpose flour
1/4 cup granulated sugar
1 tablespoon cornstarch
2 teaspoons baking powder
2 teaspoons ground cinnamon
1/2 teaspoon salt
1/4 teaspoon ground ginger
1/4 teaspoon ground nutmeg
2 large eggs, separated
1 3/4 cups milk
1/2 cup LIBBY'SŪ 100% Pure Pumpkin
2 tablespoons butter or margarine, melted
3/4 cup chopped nuts
1 recipe pumpkin maple sauce, (recipe follows)

COMBINE flour, sugar, cornstarch, baking powder, cinnamon, salt, ginger and nutmeg in large bowl. Combine egg yolks, milk and pumpkin in medium bowl; mix well. Add to flour mixture. Stir in butter. Beat egg whites in small mixer bowl until soft peaks form. Gently fold into pumpkin mixture.

PREHEAT waffle iron according to manufacturer's directions. Depending on size of waffle iron, pour 1/2 cup to 1 1/2 cups batter onto hot iron. Generously sprinkle with nuts. Bake for 4 to 5 minutes or until steaming stops. Repeat with remaining batter and nuts. Serve with Pumpkin Maple Sauce.

NOTE: This recipe makes 8 waffles of 7-inch diameter.

FOR PUMPKIN MAPLE SAUCE
HEAT 1 cup maple syrup, 3/4 cup LIBBY'SŪ 100% Pure Pumpkin and 1/4 teaspoon ground cinnamon in small saucepan until warm.

:yes It is basically the same as my pumpkin pie recipe....just a bit larger proportions. The recipe I posted would overfill a normal pie crust.

Ooops! I just compared my recipe, and there is only one minor difference. My pumpkin pie recipe has only 1 1/4 cup milk vs the 1 1/2 cup that is in the custard recipe.

And fwiw, the recipe also works just fine with a gluten free flour and/or using almond milk in place of cow milk.
