I had no appetizing leftovers today for lunch, but I did have some great ingredients on hand, so here's what I made myself for lunch:
sauteed onions, garlic, sliced portabella mushrooms, and fennel bulb
tossed with arugula and crumbled goat cheese
served on a whole wheat pita
Yum! And since my youngest dd turned her nose up at it, I ate it all myself!
