My MIL got me a Rachael Ray cookbook for Christmas and I made my first recipe tonight. :rockon It was Turkey Chili & Sweet Potato Shepherd's Pie. (http://www.rachaelray.com/recipe.php?recipe_id=3005)
I halved the recipe b/c I only had two sweet potatoes, and it made enough for the 4 of us willing to eat it + a good sized lunch portion for K's lunch tomorrow.
We're DF so I subbed Tofutti's sour cream for the sour cream, Earth Balance for the butter & a bit of Daiya cheddar for the regular cheddar. It was good. Even DH liked it and he's usually leery of meals that need dairy subs :giggle Oh and I took all the seeds out of the jalepeno pepper because I didn't want it to be too spicy.
