How long is it good for in the fridge? For example, if I freeze shredded cheese, and it passes the expiration date while frozen, once I pull it out, how long can I keep it in the fridge? Or if I've made a meal and frozen it? Most stuff goes in our big deep freezer if that makes a difference, so not being exposed to loss of chill very often, and it's colder than a regular freezer.

As for cheese, the expiration date on it is a suggestion, it is saying that the producer is guarenteeing the product untl ___. And, freezing is an exceptional way to preserve the life. You an freeze, and unfreeze as much as you want. Eventually the enzymes will break down, so your melt, and stretch may deminish the more it is frozen, and defrosted. As for once you defrost it, use it until mold develops, then of course, dispose of it.
