View Full Version : Slow Cooker Hot Fudge Cake (Chocolate Lava)

I got this recipe from a friend the other day, and tried it and MUST share it! Very easy, and has the guests thinking you spent hours preparing such a decadent dessert. Fabulous served with vanilla ice cream or raspberry sherbet.

10 minutes to prep, 1 3/4 hrs to cook, Serves 4-8

1 3/4 C brown sugar, divided
1 C flour
3 Tbsp plus 1/4 cup unsweetened cocoa, divided
1 1/2 tsp baking powder
1/2 tsp salt
1/2 C milk
2 Tspn butter, melted
1/2 tsp vanilla
1 3/4 C boiling water

1. In a bowl mix together 1 C brown sugar, flour, 3 tsp cocoa, baking powder and salt.
2. Stir in milk, butter and vanilla.
3. Pour into slow cooker greased with butter.
4. In a separate bowl mix together 3/4 C brown sugar and 1/4 C cocoa. Sprinkle over batter in the slow cooker. Do not stir.
5. Pour boiling water over mixture. Do not stir.
6. Cover, Cook on high 1 1/2 to 1 3/4 hours or until toothpick comes out clean. Watch that the top doesn't burn.

My friend advised:
When I first made this I thought the bottom wasn't cooked. Then I realized that it was the fudge. It's like an upside down cake - the top is the cake and the bottom is the fudge. When you scoop out the pieces turn them over so the fudge is on top.

i would sub:
earth balance soy-free butter for the butter
nut or rice milk for the milk
an all-purpose GF flour or almond meal for the flour

i think it would work pretty well. :nails

We've made that recipe in the oven, but I never knew I could make it in my crockpot. We call it "The Chocolate Stuff".

a rice flour mix should totally work, as well as almond milk. :-)

@Rachel: My guess would be just to put it in the oven at the same temperature as the slow cooker. Does anyone know what that would be? I think I can find out... give me a minute...

Okay, one of my trusty cookbooks says that "High" on a slow cooker is 300 degrees F. So I'd just put it in the oven without preheating it and check on it a little early, just in case. Anyone else have more ideas? I'm not all that familiar with Dutch ovens myself.

The recipe we have (regular oven recipe) to make it in a 9x9 ungreased pan and bake at 350 for 40 minutes.

My thoughts exactly. I'm doubling it for our potluck Sunday. And making it GFCF. Will let you all know how it works out! And share the GFCF version if we liked it!

I'm trying this recipe for the first time tonight for Valentine's Day. It is not working out well. Can someone tell me what I've done wrong? I'm thinking that perhaps some of the measurements were unclear. I used 3 tsp of cocoa per recipe instructions but then saw that the recipe ingredients say 3 TBSP. I've double checked the amounts on ingredients several time and am sure I've measured the rest correctly. It's just really, really runny still and it's been cooking for 1 hour and 45 minutes and counting on high. Not sure if the toothpick will ever come out clean. I admit I'm not a very good baker so that may be part of the problem. :giggle :help

IIRC, the toothpick won't come out clean. It'll be a nice, gooey rich mess.

I finally served it after I deemed it was done even though the toothpick didn't come out clean. Oh my, it was gooooooood. :yum
