I came to post it and saw where Lydiasmomma had posted one a few days ago as well. :)
Isaac doesn't like chunks, but he likes potato soup, and he doesn't like many veggies and I am always trying to get more in all of us. So...with that in mind, I decided to make it different than my ordinary.
Last night I chopped up potatoes, celery and carrots and cooked them on low all night in water and some onion powder, salt, and pepper. Then when I got up this morning, I pureed everything. It looked very orange from the carrots and kind of watery, soupy thick. I was like :think. So added the butter and some cream cheese to add the the creaminess (about 4 ounces). I added some milk, and mixed it all well with my submersion blender. Rewarmed it and it was SOOOOOO creamy and delicious!!!
