I can't believe I didn't find this recipe on GCM. :mrgreen
1. Melt 12 oz. chocolate chips (or your favorite chocolate) on low heat in double boiler or in microwave. Pour in blender.
2. Add one can coconut milk. Blend 1-2 minutes or until smooth.
3. Pour into prepared pie shell of your choice, or into ramekins. Refrigerate at least 2 hours before serving.
Extra credit: scrape out the blender and lick the spoon. :yum

I make this a lot! Well, as often as I am willing to plow through a bag of chocolate chips that fast ;) :yum It is so so so delicious. I just pour it into a jar and eat from that... it is seriously so good!!!

Oh MAN! I happen to have a can of coconut milk and 1/2 a bag of ghiradelli chips :nails but no pie shells and I am so not a baker. I wonder if I could pull a crust out in order to try this? :think

It doesn't really need a crust! I kinda like it better in little bowls like pudding. You could make a mini one with half the can of coconut milk. If you don't mind opening it for that.

So if, when you find chocolate at the store just waiting there for you like it was the last bag of chocolate on earth, and if, when you got home at 9 p.m. and decided you needed to open it, you decided to make a double patch and add a splash of amaretto and then sliced bananas and whipped cream to the 2nd batch? That would be okay. :shifty

This sounds really good! It's similar to my icecream recipe, but I've been kind of wanting something more pudding like lately. This sounds perfect.

Mine says 403 ml.
Too bad I just used up the chocolate chips in cookies. Ghirardelli is the brand for me. The semi-sweet are df.

Made mine with a chocolate graham cracker crust. :yum Not sure if it's still dairy-free at that point, since it was a store-bought crust and I didn't read the label. :tomato But that's the kind of crust I think would go best...so, for homemade, something like the almond crust Rene just posted, or any kind of df cookie crust...oreo perhaps?

Is there a difference between canned coconut milk and the half gallon fridgerator kind? I want to try this but I don't have a can of coconut milk.

what if lite coconut milk is the only kind that's corn free? any other kind of milk that would work? :shifty

You could try adding some coconut oil to up the fat. It works for me to do that when I add vanilla to the recipe, anyway. :giggle
