View Full Version : I need soup recipes - that freeze well

A friend of mine is putting together a soup swap - so the soup should be freezer friendly. We don't eat alot of soup here and the one soup (besides chili) that we eat regularly is cream based and has potatoes - so I'm pretty sure that won't work for the freezer :no would love any suggestions or even better - recipes! thank you in advance :ty

I use half the tabasco - froze this uncooked for myself postpartum and will just follow the instructions to add the pasta the last 1/2 hour of cooking time

I also froze taco soup and vegetable beef soup. I don't have a recipe for the latter, though--it's just leftover roast and the gravy/broth, V8/beef broth for the base, and as many different vegetables as I can think of/have on hand :giggle

I freeze all my soups. :shrug We just accept that when you reheat a soup with potatoes that they potatoes are going to break apart; asthetically not so good, but it still tastes great!

You can freeze cream soups, too. The trick to reheating them is to heat them hotter than you would want to eat it. If you heat it only to eating temp, the cream looks like it's separated. Heat it past and let it cool and the cream gets creamy like it was before you froze it. Occasionally cream soups will be thicker when they're reheated than they were originally; just add a splash of stock or water to loosen it up again.
