Potato recipes?

We need to use some of our fresh potatoes this week... What are your favorite potato recipes?

I am putting Baked Potato Soup in my menu plan...

I like a swiss dish called rosti. It's kind of like a giant hash brown with onions and cheese. Some people put a fried egg on top, too, but I don't care for it that way. I've seen some recipes which call for bacon.

Do you have to use them? Potatoes will store for months if kept properly.

For lunch we will be having green beans with potatoes. And I might try to dig out my mom's recipe for potato candy. :yum

You can bake some and use some of the baked ones and make potato salad with mayo and parsley and salt & pepper.P. salad tastes really yummy when made from baked potatos
