2 Tbsp extra virgin olive oil
1 onion, chopped
3 baking potatoes, peeled and cubed
6 cups water or chicken stock
1 1/2 tsp salt (less if using stock)
8 oz kale
7 oz sausage, thinly sliced (any dry paprika sausage like Chorizo)
1 cup canned white beans, drained and rinsed
1 1/2 tsp pepper
2 tbsp olive oil for drizzling

In large saucepan, heat oil over medium heat. Add onions and sautee until translucent. Add potatoes and stock. Bring to a boil and reduce heat. Cover and simmer until potatoes are tender, about 20 minutes. Puree until smooth.

Meanwhile, trim off stems and ribs from kale. Shred or tear the leaves finely. Add to the soup, along with the sausage, beans and pepper.

Cook until greens are tender, about 20 minutes. Check for seasoning.

Serve with a drizzle of oil.
