I have some vital wheat gluten that has been in an airtight container for about 7 years.
I have not used it in about five.
Do you think it is still OK to use?

Mine still seems to work and I've had it at least that long. :shifty

How much do you use per loaf of bread? I am never sure how much to add in...

I don't remember, I have not made bread in such a long time.
I was going to start trying to make it again.
