View Full Version : Three Bean Salad with Fresh Green Beans?

I have a ton of green beans I need to use up. I really wanted to make a three bean salad, but I don't have any wax beans. That is OK, I was just going to skip those, and use chick peas and kidney beans. Yum!
All the recipes I have found call for canned green beans.
How would I make the conversion?
Would I cook the green beans first?
Anyone have a really good recipe for it?

I would steam the green beans first so they're tender but still crunchy. Here's my bean salad:
2 c green beans
2 c yellow beans
2 c red kidney beans
1/4 c oil
5 tsp white vinegar
1 or 2 crushed garlic cloves
1 tsp sugar
2 tsp mayo
salt
pepper

yum...thanks mamas! i've been wanting to make this salad. i've had it with garbanzos too...so i'll make it a 4 bean salad. :)

I make mine with garbanzo, green beans & black beans. Or whatever tin of beans happens to be in my cupboard.
My dressing is: olive oil, red wine vinegar, dash of sugar, salt & pepper. Easy peasy. And yummy.
With fresh beans, I'd probably steam them first.
