of my just-out-of-the-canner nectarines. This has never happened to me before, what am I doing wrong? Will they still be ok to eat?

I'm not sure what you would have done wrong, other than maybe to much fluid, but I would think that if water is boiling out of the jar, that they aren't sealed. You can redo them after they cool, it must be done withing 48 hours.
I'm new at this though so don't quote me!

That happened with my tomatoes, and they were fine a year later when we ate them. :shrug

Other than that anecdotal evidence...nothing to offer.

I'm new at this though so don't quote me!

Mine still sealed after it boiled out. My dad said that it sometimes happens, but he didn't know how to prevent it.

If it does seal then I would think it was fine.

Yeah, they definitely sealed, so... :shrug3 :think
I guess we just wait and see if they're still good this winter.
