And, we eat A LOT of food, so please keep that in mind and

casseroles or shepherd's pie-type things are out, b/c my dd can't handle mixed foods right now, and she has already been stretched this week with mixed foods, so I want to respect that tonight.

Here is what I have:

- 1 lb. ground beef
- 1 lb. yukon gold potatoes
- carrots
- celery
- non-condensed mushroom soup
- rice
- milk
- yogurt
- butter
- green onions
- garlic
- spices

this is literally ALL I have to work with. okay brilliant ones...help!

how about meatloaf cooked in cupcake tins with a really well whipped mashed potato on top for "icing" , stir-fried rice with veggies and egg and a pavlova (http://www.joyofbaking.com/Pavlova.html)for dessert?

Meatballs w/ a garlic yogurt dipping sauce. Carrots and potatoes on the side?

Meatballs, or patties from the beef, browned and then simmered in the soup
Slice and fry the potatoes OR have rice dressed up with garlic/spices
Carrot and Celery sticks in yogurt dip(and add some green onions in there)
Milk to drink


Or...if you have time...cook the rice and then chop and saute the garlic/carrot/celery/green onions and possibly some potato and make a sort of fried rice as a side/accompaniment to the meatballs/meat patties

Okay, so I think I am going to do this:

meatloaf in cupcake tins
confetti mashed potatoes (potatoes, carrots, milk, butter) OR mashed potato icing w/ candied carrot sprinkles. :)

We are going to the farmer's market today...so I will see if they have any greens or something to add.
