that is all. I'm just so enamored with it, after eating another leftover piece for lunch, that I had to say that to someone. just don't tell my granny :giggle

I'm this close to going back to the fridge and eating the last remaining piece. somebody stop me.

tomato, Vidalia onions, a little bacon, a lot of cheese, and a touch of mayo.

I mean, with an ingredient list like that, could you really go wrong? :yum

I need more specifics. It sounds more like a salad. Do you cook it? Is it in a crust?

I just discovered it last summer and it's only worth making with fresh, local, deep red summer tomatoes. so this is only like the 2nd or 3rd one I've made, ever. but oh am I making it again soon, even if it is a bit of a pain (if you make your own crust).

I had never heard "smack your granny good" either :giggle - I think maybe it's a Southern expression? the first I heard it was in the title of the original tomato pie recipe...and so I always think of it/associate it with this pie.

have to say, it SOUNDS good in theory...but highly doubt I'd like it. My husband, otoh, would probably gobble it down. Since we grow maters, I may have to try this once we start getting more ripe one's.

The tomato pic I'm familiar with (which I also do not like) is more like a pizza without the cheese so that's what I was thinking. However, with the bacon in your pie, I might just have to try a slice!

don't get too attached to the idea of bacon...it really isn't very noticeable (though it would probably be good if you used more). the tomatoes really are the stars of the show...which is why I only make it in the summer.

:ty2 The only tomato pie I've ever seen has eggs--more like a quiche. I'm not a big lover of eggs, so this is perfect :yum

Oh, yum! I'm going to have to try this! We get plenty of Vidalia onions and summer tomatoes via our CSA :yes I'm always looking for more ways to use the tomatoes since we never got this many from our CSA up in WA :shifty

I'm made my version of this tonight -- I forget how good it is every time.:yum

I do part mayo, part sour cream and a little basil, salt and pepper with the onion.

It's even good with nasty store bought tomatoes (although home grown are the hands down winner). Baking really brings out the flavor of the tomatoes.

We made it for dinner last night with a gf crust and subbed Mozarella for the MJ. :yum DD *the self avowed cheese hater* said it was the MOST DELICIOUS DINNER PIE SHE'D EVER HAD!! and ate her whole piece. DS1 who's big complement is "you make yummy (fill in the blank here)" Declared me to be the best pie maker ever! SO :tu definitely a do-over here! :ty2

my family thought it was okay. I thought it was yummy though. I think we'd only have it one or two times a summer though.
