Love, love cupcakes but want something that has some nutrition to it. No strawberries or chocolate.

Any recipes?

I used to have a decent pumpkin/flax recipe. I gave it up because it was more complicated than it needed to be - started with a muffin base that involved 18 cups of flour, then you'd branch off with smaller recipes.

If anyone has a more basic version of that, I'd like to make those again.

I use a muffin recipe too and call them cupcakes. Frosting makes it all good. ;) To my basic muffin recipe I add 1/2 c. of something good...mashed banana or other fruit, pumpkin, etc. Or you can make zucchini or banana bread into muffins and cook for about 20 min.

I love gluten free goddess's recipes - here is her dessert recipe list, scroll down for cakes/cupcakes. http://glutenfreegoddess.blogspot.com/2008/05/gluten-free-dessert-recipes.html

Elana's Pantry also has some good, healthy (or at least healthier) cupcake recipes - here's her dessert recipe list, scroll down about 1/3 and you'll start seeing the cupcake recipes http://www.elanaspantry.com/category/desserts/ I'd like to try her "Jelly Donut Cupcake" recipe.

One of my favorite recipes is Gluten Free Mommy's Carrot Cake recipe
http://glutenfreemommy.com/carrot-cake/

I throw in extras every time. I add about a tsp of hemp flour and sometimes toss in flax as well. (sorry, I don't use measurements on that) as well as tossing in some psyllium to give it a better rise.

Depending on whether I have a severe sugar craving or not, depends on whether or not I make that specific icing or a different less sugary one for it.
