I've heard of people using honey or grape juice. Does anyone have recipes? I just got my Ball canning book and it's all sugar that I can find...

I found this (http://www.anoregoncottage.com/2010/07/back-to-basics-freezer-jam-and-why-i.html) recipe last night for no sugar freezer jam. If you scroll down to the last comment, someone writes

Thank you for posting! Just just made freezer no sugar preserves last wekend using strawberries. It came out not thick, which is how I like it, because I didn't use any pectin at all. It uses three cups of white grape juice that you boil down to one cup to give a concentrated sweetness to the fruit. It is quite tasty--we went through two pints already!

I'll hang out here to see if anyone has tips for no sugar recipes that are thicker. :popcorn

I made strawberry jam last week using this recipe:

Strawberry Jam sweetened with honey
Ingredients:
6 cups sliced strawberries
2 packages (1 3/4-ounce size) powdered pectin
1 3/4 cup honey
2 tablespoons lemon juice
Directions:
Combine strawberries and pectin in large saucepan; crush berries to blend completely. Bring mixture to a full rolling boil over medium-high heat. Boil hard 1 minute, stirring constantly.

Stir in honey and lemon juice; return to a full rolling boil. Boil hard 5 minutes, stirring constantly.

Remove from heat. Skim off foam. Ladle into clean, hot canning jars to within 1/4 inch of tops. Seal according to manufacturer's directions.

Place jars on rack in canner. Process 10 minutes in boiling water bath with boiling water 2 inches above jar tops. Remove jars from canner. Place on thick cloth or wire rack; cool away from drafts.

After 12 hours test lids for proper seal; remove rings from sealed jars.
