These zucchini muffins (http://www.phdinparenting.com/2009/08/31/healthy-delicious-zucchini-breadmuffins-great-for-kids/) are amazing. They're equally good when you replace the zucchini with carrots. :yum

I generally just use the basic muffing recipe in my Better Homes and gardens cookbook and dress it up. I like adding lemon peel, ginger and blueberries. That's what we had today.
