I cant think of any obvious reason they would be, it's not like the peels of fruits and veggies. The dough goes into the oven all the same, the outside just gets cooked more. Which could actually make it loose some nutrition, couldnt it?

Actually, I once read something arguing that they are the least nutritious! Something about carbs cooked at really high temps being very bad.

Yeah, I seem to recall reading something about the crusts having a small amount of carcinogens from being cooked extra. I never minded crusts as a kid. But I can't stand them this pregnancy. :shrug3

I had never really thought about it :think I encourage my kids to eat them just b/c waste bothers me but I don't think they are more nutritious. :shrug3

:haha Dh and I have been talking about this lately! I cannot see HOW they would be more nutritious?! I mean, its all the same dough, it just looks different because it is on the outside and cooks differently.

Once I figured they weren't more nutritious (as an adult!), I stopped forcing myself to eat them. :shifty

I got the same line too - and yes, it's a line. :giggle Actually, now that I think about it, she didn't tell me they were more nutritious, she told me they were good for my teeth. :lol

But the crust is also a rich source of antioxidants and may provide a much stronger health benefit than the rest of the bread. They found that the process of baking bread produced a novel type of antioxidant, called pronyl-lysine, that was eight times more abundant in the crust than in the crumb. The compound was not present in the original flour

On this note, today at the park, I heard a mom telling her ds that he could get sick from being in the sun too long. (She was trying to get him to leave the park.) :hunh

How did you know what she meant? Also, maybe his skin breaks out or something when he's in the sun too long.

Some medications will make you sick in the sun, and Samantha gets sick in the sun because of a genetic disorder. No telling what that mom meant. She might have been off her rocker. She might have been handling her son's issues weirdly.

Yeah my dd and ds were both just on something that they were not supposed to be in the sun while taking.

My mom told me the same thing about the crusts.

On the same vein, the other day I heard a mom telling her 4yo daughter. "Now, you can't go to the bathroom again. You went already and if you go too many times you will fall in." Which she probably meant as an exaggeration to show her exasperation at too many potty trips, but I can totally remember taking stuff like that literally as a kid.

Like when I had my mouth numbed at the dentist at 6 or 7 and he told me not to drink for a certain amount of time afterwards or I would drool ... I thought he meant I'd drool FOR THE REST OF MY LIFE!!

If you do some searching on advanced glycation end products (AGE), you will find some information that indicates that not only are these browned foods not better for you, but they are potentially quite detrimental.
