I've been adapting this recipe (http://www.foodnetwork.com/recipes/emeril-lagasse/banana-bread-recipe/index.html). The following is what I've come up with so far, and what my husband proclaims to be the best banana bread he's ever had.

Ingredients



6oz applesauce babyfood
1/2 cup sugar in the raw
1/2 cup brown sugar
2 eggs
2 mashed ripe bananas
1 teaspoon baking soda
1/2 teaspoon salt
1 1/4 cups whole wheat flour (fresh ground is so good!)
1 tsp vanilla
Pinch of cinnamon, pinch of nutmeg, pinch of allspice, pinch of cloves

Directions

Preheat the oven to 350 degrees.
Spray and flour a 9x5x3-inch loaf pan.
Mix the applesauce and sugar. Then the eggs one at a time. Add the bananas and mix well. Add the baking soda, salt, flour, and spices and mix thoroughly. The dough will be sticky.
Pour the dough into the prepared pan and bake about 35 mins or until the center is brown and set. I think our oven cooks a bit hot, so you may need to adjust your time/heat.
