The recipe on Joy Of Baking (http://www.joyofbaking.com/candy/PeppermintPatties.html)is super simple and they alwasy come out on first try!

I tried this recipe... but it is hard to work w/ cuz it uses coconut oil and we know how easily that melts. The result tasted more like Andes Mints than Peooermint Patties, maybe cuz I used peppermint extract, not oil :shrug3

Ok - so now who as a recipe to foolproof homemade oreo's?
From AllisonInTX:
1 box Devil's Food cake mix
2 eggs
1/2 c. butter
Cream it all together, and then make marble sized balls bake 8-10min at 375
let cool completely
cream together
1 pkg cream cheese
1 stick of butter
1bag of confectioners (powdered) sugar
This will make a dough that is enough to fill two full batches of the above recipe of cookies unless you quadruple stuff the cookies ;)
pinch off as much sugar dough as you want for filling and trap it between two cookes, then attempt to put it on a plate. I usually can't. I almost always eat the first entire batch :bag

I think I am in trouble with that oreo recipe. I've seen them in the past but they always looked like too much to mess with - that one looks way easy.

Lots of her recipes look :yum But it looks like she uses agave, which I tend to not use. What is the sub for other sweetEners for agave?

We stopped using Agave too. It gets so nerve racking sometimes...Agave good..Agave Bad...This good for you...This bad for you! :-/
Stevia Extract (http://www.swansonvitamins.com/NWF096/ItemDetail?n=0), This Stevia is by far the best that we have ever had. The others have a bit of an after taste.

Oreos...

BUT
Rather than making that particular frosting, I had this Buttercream frosting (http://www.bhg.com/recipe/frosting/red-velvet-cake/)left over from a cake and used it instead. Scroll down past the cake recipe for the frosting recipe.

I have a friend who makes peppermint patties using mashed potatoes........you would *never* guess that there are POTATOES in them & they're delicious! (BUT, I don't have the recipe.......wonder if you could google one?)
Those homemade oreos sound BETTER than oreos (HELLO cream cheese!).....and they sound very dangerous! :shifty

I made butter mints over the weekend; for whatever reason, noone sells them any more, except in a tin for $9 for 9 oz.

A friend just sent me a clip yesterday on how to EASILY peel idaho potatoes.....I think you score them all the way around the center, place in boiling water for 15 min. then into ice water & the peel slid right off!

Okay so for the oreo recipe I adjusted to make it gluten free. I used 1 cup sorghum and 1/4 c starch (it was either potato or arrow, I'm not sure). Then I added a tsp of xantham gum. They came out kind of cake-ier than I'd like. Did I add too much xantham do you think (for the gf bakers out there ;))? Either way they're still delicious!

I have no clue, I've never worked with those ingredients. But the ones I made... are almost gone, but I will say the boys are helping me eat them :giggle
