Seriously, you'll swear these are made with flour!!!! High in protein and vit A, too!

1 egg
1 cup nut butter (any kind)
1/2 cup squash puree (pumpkin, butternut, etc. Canned or frozen, thaw if frozen)
1/2 tsp baking soda
1/2 cup maple syrup or honey

Lightly beat egg. Add remaining ingred and mix well. Add chopped nuts and/or choc chips if desired. Bake in a greased 8 or 9 inch square pan at 350F for 25 minutes or until center springs back when pressed lightly. Don't overbake. Adapted from KerryAnn Foster's "Cooking Traditional Foods"

Thank you! I'm BRAND new to GF (as in 4 days in), and going nuts trying to find yummy things--certainly in that withdrawl stage!
I will give this a try :)
