I had to come up with something - I've got to eat every 2 hours and take a dose of my insulin meds :doh
So, while this isn't uber-healthy, it's not as bad as a lot of prefab stuff I've seen. I experimented and came up with the following:
2 eggs
1 box vanilla pudding mix (yes, I know, it's baaaad for you - but it helps w/moisture/flavor)
1/2 cup brown sugar
mix those, add 1 cup of soynut butter and 1 cup of water
stir in 1.5 cups self-rising flour, and 2 cups quick cooking oats
add in 1/4 cup more water if needed
grease/spray pan, spread in dough, and cook @350 for 15 minutes
It definitely isn't the healthiest snack out there, but it's something I can stomach eating frequently :giggle
