I just made concord grape jelly from scratch, without pectin (allergy issues), all by myself, and it actually jelled!

I don't have any jelly jars, though, so it's all in a container in the fridge right now! :doh

You have to tell me how! I have three gallons of freshly processed concord grape juice concentrate. I want to use half to make jelly for my son who is allergic to corn. I was going to try apple pectin, but don't know how. :scratch

Please, oh, please share!

We deal with corn allergies as well - ITU. :hug

Here is the recipe I used: http://www.cooks.com/rec/view/0,1623,145170-224202,00.html It's just grapes and sugar. My grapes were so sweet to begin with, my jelly is like candy. Also, I ran out of white sugar, so I used about half white sugar and half brown. Oh, and I don't think it matters, but I used unrefined sugars.

Our grapes were super sweet this year, too. I guess that's the upside of having a cool summer. :yes
