Making yeast rolls ahead of time

Can I make rolls in the morning when the baby is asleep and bake them tonight? If so, how do I do it? Let them rise before putting them in the fridge, or after, or both?

I have a recipe for croissants that is kind of like that. Mind I've never made it myself, just my mom's experience, but it was very easy. Let me see if I can find it.
