My fav muffin recipe calls for 3 cups of carrots. Could I use 3 cups of shredded apples instead? With Rosh Hashanah and fall/apple season coming up, it would be nice to change up a bit if possible.

Apples are a lot softer and waterier than carrots...I am NOT good in the kitchen, so I coul dbe totally off, but it seems like you'd have to adjust for the extra moisture somehow, and expect the apple to cook more quickly than the carrot would have.

No, you can't. Apples have a lot more moisture. You would have to adjust all the other ingredients. . . . I would look for a good apple-muffin recipe. :)
