I just bought a bundle of multi-colored carrots - purple, yellow, orange and white. The kids thought they looked neat, and they do.

Now, what to do with them. Any suggestions beyond just boiling them or serving them raw?
(my kids hate raw carrots, so them wanting to buy these was a bit of a shock)

Thin sliced with slices of zucchini and maybe red potatoes, spread in overlapping circles with olive oil and rosemary and sea salt, baked just long enough? Oh, gosh, I'm hungry now...

ooh, I have zucchini, and there is rosemary in my garden. Might have to be our side dish tonight!

I just bake them with butter, salt and pepper. They're Banana's favorite. :yum
