Non-wheat flour in your 5-minute-bread?

If you've done it, what sort of a flour mix did you use? If it's up to me (or rather, my sister) to be the first to experiment, what sort of flour would you suggest? Her husband just went wheat-free, so she has a lot to figure out yet.
