Does anyone have any good vegetarian recipes for curries or aloo's that they can share with me? Today I am trying to make cauliflower paneer and it smells fabulous but I'm not crazy about cauliflower!

Yellow Split Pea Dhal Recipe

Dhal, sometimes spelled dahl or dal, is a staple of Indian vegetarian cuisine. This easy recipe is for a basic vegetarian and vegan yellow split-pea dhal. Serve with rice, or, add extra liquid to make a more soup-like dhal. Caution - it's got a bit of a kick!
INGREDIENTS:

* 1 cup yellow split peas, uncooked
* 2 cups water or vegetable broth
* 1 tsp turmeric
* 1/4 tsp cayenne
* 1/2 tsp salt
* 1 tbsp margarine
* 1 onion, diced
* 11/2 tsp cumin, whole seeds or ground
* 2 whole cloves
* dash pepper, to taste

PREPARATION:
In a large pot, place the peas and water or vegetable broth, and bring to a slow simmer. Add the turmeric, cayenne and salt, and cover. Allow to cook for at least 20 minutes, stirring occasionally.

In a large skillet or frying pan, heat the onion, cumin and clove in the margarine.

Cook for 4 to 6 minutes, until onion is soft. Add the onion and spices to the split peas, and allow to simmer for at least 5 more minutes.

Add a dash of pepper and more salt, if desired, and serve hot with rice or alone in a soup bowl.

This Indian food recipe is both vegetarian and vegan.

I haven't tried this one: Tarka Dhal

1/2 cu. masoor dhal (split red lentils)
1/4 cu. moong dhal (split yellow lentils) (if you only have brown lentils, you can still do this, but IMO, it just won't be as fabulous...you also will need to cook longer)
2 1/2 cu. water
1 tsp. ginger pulp
1 tsp. garlic pulp
1/4 tsp. turmeric
2 fresh green chilies, chopped (optional)
1 1/2 tsp. salt

tarka
2 Tbs. oil
1 onion, sliced
1/4 tsp. mixed onion and mustard seeds (you can just use mustard seed if you want)
4 dried red chilies (or just use some dried, crushed red pepper to taste)
1 tomato sliced (or some drained, canned tomato)

boil lentils in water with ginger, garlic, turmeric and green chilies (if using) for 15-20 minutes (or until soft)
mash the lentil mixture down...consistency should be similar to creamy chicken soup
if it looks to dry, add more water. season with salt
TO PREPARE TARKA:
heat oil and fry onion with mustard/onion seeds, dried red chili, and tomato for 2 minutes (over medium high heat in skillet)

pour tarka over dhal and serve over rice.

Don't know if this counts as Indian, but it's good!

From a mama here (I always make it vegetarian & I never cook anything in the skillet - just throw it in crockpot):
Crockpot Coconut "Lamb" Curry

Ingredients:
2 lbs Ground Lamb
2 cups chickpeas, soaked and cooked according to NT (or canned) (I start with dried beans)
2 tsp salt
1/2 tsp black pepper
2 tbs curry powder
2 sweet potatoes, peeled and diced
1/2 Cauliflower, diced
1 medium onion, chopped
1 can coconut milk
1 cup chicken stock
2 tsp. hot sauce, optional
1 14 oz. can diced tomatoes with the juice
1 cup peas, frozen

Brown the ground lamb and onions together in a skillet with a little oil until the onions are soft. Add the curry powder and cook for one minute. Scrape into the crock pot. Sprinkle with salt and pepper. Add potatoes, cauliflower, coconut milk, stock, hot sauce, tomatoes, and stir to combine. Cover and cook on low 6-8 hours. About 1/2 an hour before serving, stir in frozen peas. Serve over cooked rice.

I'm trying to cut down on my meat consumption (except for fish) because of my cholesterol. Is lamb a very fatty meat?

I honestly don't know. I've never cooked it before.
