What's the difference between interlock and jersey?

I know one curls at the edge and the other does not and that one needs hemming and the other does not, but I am not sure which is which. :scratch

Jersey is much thinner (think white undershirt fabric) while interlock is much thicker and feels almost like a stabilized knit fabric (like a nice thick turtleneck).
