Because I think I want to figure out how to make those, even though they can be easily bought in a store. (Virgil's being the best. It doesn't have HFCS, it's creamy and sweet and lovely and goes good in Haagen Daas Ice Cream.)
Here is one recipe http://biology.clc.uc.edu/Fankhauser/Cheese/Ginger_Ale_Ag0.htm
But it's got booze in it.

Here's another site. Natural soda sounds interesting. Junk food must have been so much healthier in the past. Or at least they'd try to say that Coco-Cola was a tonic, but it had cocaine in it back then.
I'd like to figure out how to make sarsaparilla and maybe a clear homemade cola, which is odd because I hate the grinded glass/sugar soda taste.
But mostly I'd like ginger ale because ginger beer is too strong and I need something to help my poor stomach.

Homemade root beer is simple and tasty!!
You could purchase a kit to start off with and then, once you know the process you could modify it or use your own ingredients...
I haven't made ginger ale yet, but I do flavor my kombucha with ginger and that gives it a really gingery-aley taste.
I love Reed's extra-ginger, ginger-ale.

I've made ginger ale. It was pretty easy. :) I just made the syrup and mixed with club soda and some fresh limes. :yum
