View Full Version : Replacing Shortening in a Muffin Recipe?

I have found a fantastic banana muffin recipe that uses 5 bananas for a dozen muffins. I am eager to try it, but it calls for vegetable shortening, which I want to avoid. I would like to use canola oil if possible to reduce the saturated fat. How do I swap shortening for oil?

I've done that lots of times with good results. Just substitute an equal amount of oil. :)

Coconut oil is a great shortening sub. :)

I've successfully substituted olive oil. :)
And I recently substituted butter and liked the flavor even better. :tu

We use Earth Balance's non-hydrogenated shortening. It's mostly palm oil.

I like this stuff, too. It works better for me than coconut oil.
Butter DOES taste the best, though. :bag
