I made banana bread for the first time yesterday. I got the recipe from a friend. I had hers and it was amazing!
It calls for 1/2 c. shortening, 1 c. sugar, 2 eggs, 1 tsp baking soda, 2 c. flour, 6 mashed bananas and 1/2 c. walnuts. I baked it for 1 hour at 350º as instructed, but when I took it out and cut through it 15 minutes later, the middle was not cooked.
I used a glass dish; could this be why? Did it just need an extra 15-30 minutes because of that?
It was also high up in the over - should I have lowered the rack?
I also wonder if it had something to do with the bananas themselves. Three had been frozen, and 3 were fresh. Would that make a difference in baking?
