Not exactly authentic, but it stretches the guacamole. I was skeptical at first, but it really tastes delicious and nobody noticed the difference :shifty
The night before:
1 cup dried lima beans
1/2 cup chopped onion
into a bowl. Add enough water to cover and then let soak overnight.
Next Day:
dump beans & onions into a pot. Bring to a rapid boy, and then simmer for an hour and a half. Drain and Cool
Combine:
3 Tbsp Lemon juice
1/2 tsp salt.
1 Tbsp butter
1/4 tsp cayenne pepper
3 ripe avocados
in a food processor. Add bean mixture and mix until smooth.
Add one chopped tomato and serve :)
