View Full Version : Help! What do I put in my calzones?

I want to make calzones with my 5 minute bread...here are some things I have on hand-- how should I combine them?

scallions
onions
spinach
frozen corn
carrots
celery
a red pepper
three leftover baked potatoes
raw red potatoes
black beans
salsa
sweet potato
refried beans
a plum tomato


swiss, cheddar, pepperjack and parmesan cheese

salsa, ranch, tomato sauce, pizza sauce, sour cream

I was considering roasted sweet potatoes, black beans, salsa and pepperjack (we make quesadillas like that) but I wasn't sure it'd be good in calzone form.

I would really like to dice up the potatoes and fry them and use them somehow so I can get rid of them...

Or alternately, does anyone have a recipe (besides potato soup) that I can use leftover baked potatoes in?

I'd saute up some onions (and/or scallions) with the spinach and garlic if you have it. And of course some cheese. :yum

As for the baked potatoes....I'd eat it as is for leftovers or throw some chili and cheese on top. Or what about making loaded potato skins.

Twice baked potatoes would be yummy.

well, here's the problem: I don't have a ton of spinach so i need something else in there with it...

Oooh. I wish I had mushrooms. I ended up making hummus and pita for dh and I, and mini cheese pizzas for the kids. :bag I'm feeling lazy.
