View Full Version : Yikes! Out of sugar! Can I use molasses?

So I finally found out what was making my bread so incredibly crusty (it was following the instructions in the cookbook--darn it, Joy of Cooking, you let me down!). I now have a recipe that my husband has asked me to make twice a week so that we can finally STOP BUYING BREAD. But I forgot to buy more sugar! It only uses a spoonful per loaf, just enough to get the yeast working in a hurry. I have no sugar in the house, but I do have a bottle of molasses. Can I substitute it, and if so, how precisely? I'm supposed to bake more tomorrow (Friday).

If it matters, this is 75 percent whole wheat bread made with store-brand bread flour, King Arthur white whole wheat flour, yeast, olive oil, sugar, and salt.

What about using honey, maple syrup, agave nectar, or brown sugar? :shrug

Nothing sugar-related in the house but molasses. Oh, and a couple of packets of powdered apple cider drink mix.

I'd give the molasses a go, and sub it in exactly for the sugar.
