View Full Version : looking for Deceptively Delicious Recipe for Quesadillas

I loaned out my Deceptively Delicious book, and the lady I loaned it to is on vacation this week. I wanted to make the quesadillas with chicken and pumpkin or sweet potatoes or something like that. Does anyone have that recipe handy? Thanks!!

Here goes... I have the book, but I am a gluten free vegetarian so I added my own touches ;)

Quesadillas with butternut squash

Preheat to 400' coat large baking sheet with cooking spray

Coat large skillet with cooking spray on med-high heat and saute (1/2 lb chicken) with salt pepper and chili powder to taste (1/8 tsp +) (Cook chicken)
* I am vegetarian and use portabello mushrooms

In a small bowl or mini chopper mash the 1/2 cup navy (or any beans, I use black) with 1/2 cup sour cream or substitute.
In another bowl mix 1/2 cup butternut squash/ sweet potato pruee <I like roasted orange bell peppers> and 1/2 cup shredded cheese or substitute.

Use 4 tortillas, Wheat or GF or Corn etc. Spread bean mixture on two tortillas, arrange chicken/mushrooms. Spread on cheese/puree mixture and top with another tortilla.

Place Quesadillas on the baking sheet and bake until crisp, 5 mins or so.

Cut into wedges and serve with salsa and avocado etc.
