View Full Version : crock pot herbes de provence whole chicken - easy and yummy

This recipe is simple and fall-off-the-bone tender and delicious! The suggested herbs are herbes de provence, but I've used a mixture of herbs found in herbes de provence and other herbs with a more Italian taste - all work out just as well depending on the mood our taste buds are in :smile

Ingredients:
1 (one) 5 lb whole chicken
2 medium onions, coarsely chopped (your choice of red, white or yellow, depending on preference for taste / strength - I use white)
3 Tbs herbes de provence (or other herb mixture of your choosing and creativity)
salt and pepper to taste
1/4 cup chicken broth
olive oil (enough to coat chicken - usually approx 3 Tbs)

To Prepare:
1. remove giblets (if any) then wash chicken and pat dry
2. give chicken a good rub down with olive oil, coating it enough so herbs will stick :)
3. get messy - season chicken with salt and pepper and herbs by massaging generously over entire chicken
4. stuff one chopped onion inside cavity of chicken
5. place chicken in crock pot and pour in chicken broth
6. toss second chopped onion into the broth around chicken
7. cover the chicken, turn your crock pot on low and cook for 7-9 hours (depending on how high your low setting cooks)
8. remove chicken gently from crock pot making sure to scoop out all of the pieces that fall off the bone into the broth and enjoy!
