I just found a really cool website for jar gifts:

I want to try some of the baking in canning jar recipes, but I'm wondering if the bread will really be fresh (good to eat) after a significant amount of time. I'm due late November, so I'd love to have gifts prepped and ready in advance.

I researched this a while back, and from what I gathered it is a toss up. The problem is that the temperature the cake/bread needs to reach in order to fully cook it, may not be a high enough temp. to kill any bacteria that could have found their way into the batter. So, you *could* be incubating some icky stuff in there. IIRC the companies who make these to sell keep a check on the internal temp. to be sure it has reached a high enough temp to steralize everything inside the jar.
