I have one that's called taco soup. I do it in a crock pot...
1 lb ground beef or similar
1 can black beans, undrained
1 can pinto beans, undrained
1 can corn, drained
1 BIG can diced tomatoes (I use "petite" diced)
1 largish can sliced black olives
1/2 small can diced green chiles
diced onion...I use a Tbsp of dried minced, but one small to medium fresh onion is good, too
1 packet taco seasoning mix

low for whatever...4-8 hours?

Needs cheese melted on individual servings and a dollop of sour cream. :yum Great with corn bread.

By the way, if you're pressed for time, forgot the put it in the crock in the morning, whatever, the above can be changed into what I call "rainbow nachos" - you just do it in a skillet, drain everything but the tomatoes...serve it in flat bowls with cheese on top and chips for scooping.
