View Full Version : Crockpot Pumpkin Oatmeal

I don't know if this should go into Slow cooker or Breakfast :) But the Breakfast section looks pretty empty!

Crockpot Pumpkin Oatmeal

Stir together 1 cup steel cut oats (or 1 1/3 cup for regular old-fashioned oats)
4 cups water
1/2 cup pumpkin puree (canned is fine!)
1/4 cup brown sugar
2 tsp cinnamon
1/2 tsp nutmeg

Cook overnight (8 - 10 hours for steel cut, 6 for regular) on low.

Serve with a handful of pecans and additional sugar if you'd like. Great source of fiber and Vitamin A! :yum

That sounds wonderful! :yum And what a great way to work in some nice orange veggies for breakfast! I'm printing! Princess LOVES having a nice hot breakfast and I'm so not a morning cooking person. I bet she'd be excited enough to put it in the crockpot herself. :P~

Oh wow! That looks SO yummy and SO easy! And so good for us too!

I think we'll be having this tomorrow morning! Dh won't eat it (he's ridiculously picky :rolleyes) but he already has breakfast plans so this will work out perfectly! :yes Yum!

Technically, a serving of regular oats is 1/2 cup. I doubled the recipe and used regular, but it made A LOT. I have a 4-quart crock pot and it was almost full.

:tu Good information. Now I know how many batches my crockpot will hold! :) Now to see if I still have that can of pumpkin floating about. If we do this is breakfast in the morning!

:yes :yes :yes I am so glad I stubbled upon this! I eat oatmeal every morning and I love pumpkin, However, I keep forgetting to buy it at the store and substituting sweet potato instead. So sweet potato oatmeal tomorrow! :hearts

just what ARE steel-cut oats, anyway? I hear about them all the time, but have never seen them and don't know what the difference is. :scratch
