Sourdough or other NT type bread?

I really want to make our own bread but I feel so discouraged. I understand that freshly ground sourdough bread is best according NT/Maker's diet but I can't do that right now. Is there an ok alternative? Can I use organic whole wheat flour and organic white flour?

Is there a more simple recipe that someone could suggest?

Do you have the LLL cookbook? Whole Food for the Whole Family?
I had pretty good success with their very simple sourdough.
I am going to try it again this week. It is the only way I have been able to get 100% whole wheat bread to come out well.
