I make my own turkey breakfast sausage....it is really easy and we love it. Plus then I don't have to read labels looking for sausage that is free of nasty preservatives.

2 lbs ground turkey
1 1/2 t salt
1 t dried sage
1 t pepper
1/2 t cayenne
1/2 t ginger

Mix all ingredients together. Cook on oiled pan. I use coconut oil. I cook them in 1 ounce patties and then put them in the fridge. Then I can just pull out a couple for breakfast and reheat them.

Sometimes I play around with the spices a bit, especially the cayenne depending on how fresh it is and how hot we want the sausage to be. I've had some cayenne where 1/2 t would be a bit too much!

Can I post this on my blog? I'm trying to centralize some recipes, and for me that's the best place I can store this information.

Yum! We did this today, and it's SO good! We didn't have cayenne, so we used some chili powder and crushed red pepper.

I'm bumping this. I found it while looking for something else and it is just what I needed. Every sausage in the store has sugar in it! so making my own is a great solution. I used ground pork and adjusted the spices a bit and it is very good.

:bag What would you eat with this breakfast sausage? We never have anything like this for breakfast?

I had fried eggs. I'm planning to make grain free biscuts later in the week and make a sandwich with sausage and scrambled eggs. We usually try to give sausage to the kids when they have pancakes to midigate the sugar rush a bit.

You can make breakfast tacos too. Just throw some browned sausage in a flour tortilla with cheese, fried potatoes, and scrambled eggs. Yum. Thanks for the recipe, I never thought about making my own. Genius!:tu

Thanks! This looks great. I've been avoiding buying sausage because of all the other stuff in it, so this is perfect. I don't know why I never thought to make it :)

I use pretty much the same recipe but love to add in a pinch of dried basil. Makes it taste more "sausagey" to me. :)
