I am looking for easy bean or ground turkey recipes. We can't have dairy, but as long as it is not something that does not have to be in it we can leave it out.

We eat a lot of ground turkey because it's so cheap. Here's a favorite:


1 pound ground turkey.
Oil, preferably a flavorful type such as olive or corn oil.
1 bag frozen Santa Fe Style Vegetables OR 1 pound TOTAL of the following: diced red sweet pepper, diced onion, cooked black beans, kernel corn, chopped broccoli florets.
Chili powder, coriander, etc.
Salsa.
Flour or corn tortillas, warmed and softened.
IMO.

Fry up the turkey first, then set aside; it gives off a lot of liquid. Drain the pan (into your soup-stock container if you have one), then heat some oil in it. Now stir-fry the veggies over high heat with seasonings of choice. Stir in the turkey and take off the heat. To serve, put a spoonful of the mixture into a tortilla with a dollop of salsa if desired, then roll or fold and eat with additional salsa and/or IMO if desired.

Ground turkey is pretty versatile. Substitute in any recipe calling for loose-fried ground beef. You may have to adjust the seasoning slightly. It makes great chili.

We had this the other nite and I served it over rice and the boys loved it....
Skillet Beef and Beans
1lb ground beef (or turkey)
1 chopped onion
1 can beans(I used kidney)
1 can corn, drained
1 can crushed tomatoes(I used tomato sauce)
chili powder(I used a 1/4 tsp red pepper)
salt to taste
pepper to taste
garlic powder to taste
cook beef and onions, drain fat, add rest of ingredients, simmer for 20 minutes, serve over rice
