I've been trying to come up with a master meal plan. I figure, if 15 of us post 2 meals each that's a full month! So post your favorite meals that only take 20 minutes or less to prepare and then we can all see lots of yummy meals that dont require lots of time for us to make :yum

Both mine are crock pot

Sweet and sour chicken

4 med. potatos
4 boneless, skinless chicken breasts
2 tbsp cider vinegar
2 tbsp brown sugar
1/4 tsp nutmeg
1 tsp dried basil
1 cup orange juice


Directions

1. Peel and slice potatoes, place in crock pot, place chicken on top

2. In sperate bowl, combine all other ingredients

3. over chicken and potatoes

4. Cover and cook low for 6 hours

Left over juice in pot make great dipping sauce!


Rosemary chicken

Ingredients

1/2 cup olive oil
2 tablespoons and 3/4 teaspoon minced garlic
1 tbsp dried rosemary
2 teaspoons dried basil
2 teaspoons Italian seasoning
3/4 teaspoon ground black pepper
salt to taste
5lb chicken


DIRECTIONS

1. In a small bowl, mix the olive oil, garlic, rosemary, basil, Italian seasoning, black pepper and salt.

2. Loosen the skin from the breast, be careful not to tear the skin.

3. Using your hand, spread the rosemary mixture under the breast skin and down the thigh and leg. Rub the remainder of the rosemary mixture over the outside of the breast. Use toothpicks to seal skin over any exposed breast meat.

4. Cover and cook on low for 6 hours

Cheesy hashbrown casserole

1 bag of shredded frozen hashbrowns
1 can of cheddar cheese soup
1 container of sour cream
Shredded cheddar or mozzerella cheese (both are really good, mozz makes it creamier)
Diced cooked ham or chicken
Salt/pepper

Mix all of the ingredients in a big bowl and then lightly press into a greased casserole or cake pan. Bake at 350 for about 40-45 minutes. You can add a little cheese on top at the end of the baking time too. I also mix salt and pepper together and sprinkle on top.

Unstuffed chicken

This is an easier version of stuffed chicken although making the stuffed chicken probably takes less than 20 minutes also.

1 container chive and onion cream cheese
1 large onion diced
1/2 cup to a cup of chopped spinach drained (I use thawed frozen spinach)
Thin sliced chicken
2 sleeves of ritz crackers crushed
melted butter

Mix the first 3 ingredients and spread in a cake pan. Layer chicken on top, then sprinkle the ritz crackers thickly over the chicken. Drizzle melted butter all over the top and give it a few shakes of salt and pepper. Bake at 375 for 40-45 minutes.

If you want to do the stuffed version, just flatten chicken breasts, add the cream cheese mixture, roll it up, dip in melted butter, then in crackers. Bake at the same time and temp. YUM.

These are my super fast, non-cooking meals:

1. Boxed pasta and jarred sauce with a bagged salad on the side! We do this one A LOT!

2. In the crock pot, layer in chicken breasts or pork chops with a bottle of bar-b-que sauce or a can of "cream of" soup and a little water. Cook on low for 8 hours. Serve with sliced fruit and grocery store dinner rolls.

Italian Chicken Pasta
cook tri color pasta, after it is cooked add in chopped red onion, can of corn, can of chicken & Italian dressing to taste (we usually add a little right away & then each person adds to their own plate). Can eat warm or cold
side dish usually is a green veg (mix vegs, green beans, maybe a spinach salad)

Chile Ole
1c chopped onion
2 cloves garlic
1 T veg oil
2 lbs ground beef
16 oz tomato sauce
2 cans rotel tomatoes (I usually use one can rotel & one can of diced tomatoes b/c 2 cans of rotel are just too spicey for me)
10 oz A1
16 oz can black beans
11 oz can corn
shredded cheese, sour cream, fritos

1. cook onions & garlic in oil until tender, add beef, cook until brown & drain

2. add all other ingredients *except* beans & corn. Heat to boil, reduce heat, cover & simmer 10 min

3. stir in beans & corn, heat uncovered 10 min

4. garnish with cheese, sour cream (I don't like sour cream, but dh does) & fritoes

great side dish: cornbread.

simple & not too expensive. It makes *a lot* of food, too. YUM!!!!

I've got one. I'm drawing a blank for another at the moment, but I'll come back.

This is the easiest dinner I do that looks somewhat put together: :giggle

Ham/Turkey and Swiss Sandwich Roll

1 tube of refrigerated pizza dough
honey mustard
sliced swiss cheese (six slices)
ham or turkey (can't remember the package size, but I usually use 1/2 package)
1 egg

Whip raw egg with a fork in a small bowl. Unfold pizza dough into a rectangle on a lightly greased cookie sheet. Spread honey mustard thinly over dough. Place cheese and turkey or ham over mustard. Fold up edges of dough and pinch to seal. Brush with egg (you can skip this part if you want but it looks really nice if you do it). Put in oven at temperature specified by dough package and bake until golden brown (usually 10-15 minutes).

I serve this with a fresh spinach salad. It's a great summer or fall meal ecspecially. To make it for company I just double it.

I only have one in mind right now -

Enchilada Lasagna

Browned ground meat (w. onion, if you're so inspired)
Black beans
Canned enchilada sauce
Flour tortillas
Cheese

Layer together, bake til warmed. Great for little helpers. :) Garnish w. sour cream & green onion.

My Desperate Dinner:

Put beef back ribs or pork country-style ribs in a slow cooker. Dump barbecue sauce on top. Leave to cook all day on Low.

Hearty Japanese-Style Breakfast:

You need to start with cooked brown rice. Heat 1 cup rice until piping hot (it takes 3 minutes in my microwave). IMMEDIATELY stir in 1 raw egg or 1 or 2 leftover egg whites or yolks--whatever you have; the hot rice will cook the egg immediately. Add one or more of the following: soy sauce; sesame oil; Japanese seven-ingredient table seasoning; sliced scallions. Eat right away.

Back to dinner:

If you made brown rice anyway, make fried rice with the rest of it! It can be vegetarian or non-, with any veggie. And it definitely takes less than 20 minutes!

Homemade hamburgers served on whole-wheat toast.

Here are a couple of my all time favorites...

Roasted Herb Sticky Chicken (crockpot too)

4 teaspoons salt
2 teaspoons paprika
1 teaspoon cayenne pepper
1 teaspoon onion powder
1 teaspoon thyme
1 teaspoon white pepper
1/2 teaspoon garlic powder
1/2 teaspoon black pepper
1 large roasting chicken
1 cup chopped onion

In a small bowl, thoroughly combine all the spices. Remove giblets
from chicken, clean the cavity well and pat dry with paper towels. Rub
the spice mixture into the chicken, both inside and out, making sure
it is evenly distributed and down deep into the skin. Place in a
resealable plastic bag, seal and refrigerate overnight.

When ready to cook chicken put the onions into the cavity, put the
chicken into the crockpot and do not add any liquid. As the cooking
process goes on it will produce its own juices. Cook on LOW for 8 to
10 hours and it will be falling off the bone tender.

Dragon Shrimp

This is a.ma.zing. and works best if you have a gas stove. Seriously, SO good.

2 tablespoons SHERRY
3 tablespoons SOY SAUCE (pref. not Kikkoman)
2 tablespoons SUGAR
1 tablespoon RED WINE VINEGAR
28 to 40 SHRIMP
3 tablespoon OIL
1 tablespoon GRATED FRESH GINGER
1 bunch SCALLIONS/GREEN ONIONS, sliced thinly


Prepare some rice . Get everything else ready, for the cooking itself will be very quick. Mix the sherry, soy, sugar and vinegar in a little cup.
When there is only 5 minutes left on your rice timer, heat the oil in a non stick frying pan. Fry your ginger and scallion for about 30 seconds on medium high heat. Add the shrimp and stir fry until three quarter done. Add your cup of sauce and stir fry a bit longer, until barely done and a bit caramelized.

Serve over the rice.

Butterflied High-Roast Chicken w/ Crispy Potatoes

1 whole chicken, giblets removed
Coarse Salt
Freshly Ground Black Pepper
2 Branches fresh rosemary/thyme.....I used dried Thyme & Basil
1 fresh Lemon, cut into 4 thin slices. (I didn't have lemon so I used
Tangerine)
2 cloves garlic, thickly sliced
2 pounds Yukon Gold Potatoes, sliced into 1/8 inch thick rounds
1 Tbs. Olive Oil (I used Coconut Oil)

Preheat Oven to 425

Using heavy-duty kitchen shears or poultry shear, cut along both side of the
chicken's backbone and remove it. Save the backbone for homemade stock.
Breast side up, spread the chicken open, and press down with the palms of
your hands to splay out flat. Rinse the chickens and pat dry with paper
towels. At the top of the breast, loosed the skin so that you can insert
fingers between it and the meat. Spread about 1/2 tsp. salt and a few grinds
of pepper under the skin of each breast. Then insert spices (rosemary,
basil, thyme), citrus slices, and a few garlic slices under the skin of each
breast and push down near the thigh. Be careful not to tear the skin. Repeat
on other breast. Sprinkle the rest of the chicken with salt & pepper (I
rubbed with coconut oil first).

Gently toss the thin-sliced potatoes with the oil until thoroughly coated,
and season with salt & pepper. In the bottom half of a broiler pan, overlap
the potato slices, like fallen dominoes, in the rows the length of the pan,
and covering the entire bottom.

Place the slotted half of the broiler pan over the base, and set the
chicken, skin side up, on top. Press to flatten. Roast until the ski is
golden-crisp and the juices run clear, about 50 min to 1 hour. Thermometer
should read 160F in the thickest part of the breast. Set the chicken aside
on a cutting board, and let rest for 10 minutes before carving.

Meanwhile, if the potatoes have not turned crispy golden brown around the
edges, return them to the over while the chicken rests. Carve the chicken
and serve with the potato slices.

(I put mine back in for the 10 minutes and my family RAVED about them. I
served it with sauteed green beans/mushrooms).

Here's mine:
Beans and salsa
Can of bans
glug of salsa
bag of corn chips
Yup, just heat the beans and salsa and scoop it up with chips. We used to eat this almost every day for lunch.

Tortilla Soup
Can of beans (I like pinto, but kidney and black beans are good too)
Can of corn
Can of chicken (or leftover cooked chicken)
Glug of salsa
Glug of chicken stock
Two cans of tomato sauce
some cumin
some chili powder
bag of corn chips

Heat it all up and scoop it up with corn chips.
I make this quite a bit. I get canned chicken that doesn't have anything in it, it's about $2 or so a can, but nice for times I don't know what to make. Plus it's an easy company meal, I've always had people rave about it. :)

Oh I forgot about the ALL time easiest crockpot dump chicken...and SOOO yummy.


Frozen boneless chicken breasts
1 can Corn
1 Can black beans
1 jar salsa

Vary amount of can(s) to fully cover the amount of breast you are using. Can use non-frozen breast but it works with frozen too.

Cook all day in the crockpot on low. Be sure the chicken is cooked thru. Then add a block of cream cheese cut up and cook another 1/2 hour until melted.

SO easy and so yummy....DH's & Teens can easily make a yummy dinner. You can serve over rice/chips/noodles....or just eat it plain.

This was a great recipe when I was on bedrest.

Normally it doesn't have a side. Just served over rice or tortilla chips.

YES...we top everything possible at our house with shredded cheese and sour cream. :)

You really could play with this adding more things like black olives, caramelized onions, jalapeņos, just up to your taste.

This is my easy, no thinking, dump recipe....it is more about eating than nutrition or being creative. :giggle

[b]Betty's Cheesy Chicken Bake I guess this is a Betty Crocker recipe? It's been passed to me from my aunt, from someone else.

4-6 chicken breasts (thawed)
4-6 slices swiss cheese
1 can cream chicken soup
1/3 cup white cooking sherry/wine (optional)
Half of a regular sized bag herb stuffing (uncooked)
1 stick melted butter

Chicken breasts in baking dish. Salt the breasts (optional).Lay one slice cheese on each breast. Mix the soup and sherry, spread over chicken and cheese. Sprinkle stuffing over all (may need the whole bag if you use 6 large chicken breasts). Melt butter and pour over the whole thing. Bake at 350 for....i dunno, until I cut one open and it's not raw. :grin (I think it's about 40 - 45 minutes depending on thickness of your chicken. It's usually done if it's bubbling all around the edges.)

I like lots of gooey stuffing, so I use more than some people may. You can just sprinkle a light layer of the stuffing over the top for a little crunch and herbiness.

My mom has done the same recipe in her crock pot (she used cream of mushroom instead) on high for 4-5 hours.

I like to serve this with micro-steamed sugar snap peas or a salad, and herbed rice (one of the instant quick-cook pre-seasoned packages).

[b]Any kind of pasta/meat/sauce bake with cheese on top
I love this for leftover cooked pasta. Or fresh.

Half package of any kind of pasta, cooked.
1 jar pasta sauce (red or white) or home-made sauce
1 lb any kind of cooked meat (we use ground beef or chicken chunks....it would be good with italian sausage or ground turkey. Not sure about seafood, but it might be really good with shrimp.)
1 cup Italian blend cheese (shredded)

Layer in baking pan: pasta, sauce mixed with cooked meat, cheese. Bake for 20 min. on 350, or until cheese is melted.

These are my two quickest "real meals". I have other quickies that are more snack-y (like tuna melt quesadillas, mac-n-cheesie-weenies, blackened tilapia.)

I have found that pretty much anything I can cook without reading a recipe becomes a 30 minute or less meal (unless it involves lots of chopping/peeling.)

a new one we did a few wks ago and everybody loved it! (thats saying a lot)

6 boneless chicken breasts
16 oz jar of black been and corn salsa
lotsa shredded cheese (we used mexican blend)
1 can of black beans and/or corn extra is optional, ive done it both with and without and its just as good but makes more food w/ less cost)

layer on salsa, lay the chicken, layer black bean (can skip step if you want to, layer cheese, layer corn (again, skip if you want), layer salsa, layer cheese....takes about 10min to prep, 30ish to cook
serve with rice is what weve done...you could probably put in some instant rice on bottom and add a bit to cook time to make it a full casserole

this is what i was going to add, but i don't use cream cheese just a little shredded on top.

sometimes i serve it with rice - white or spanish. or shred it in the crockpot and serve it in a warm tortilla with some chips and quacamole. YUM!!! one of my favorites!!!


another easy - pasta

anykind of pasta
jar of sauce
italian sausage, browned and crumbled

this is usually served with garlic bread (whatever bread is available - in particular heals or leftover buns - spread with butter and a little garlic powder/salt
and sauteed zuccinni/yellow squash. slice squash/zuc put in hot pan with a little oil, sprinkle with salt and pepper and garlic. sautee until smells good and looks a little mooshy.

also. i'm learning to marinate my meat in the freezer as it comes home from the store usually in bulk. think dream dinners. its SOO easy to pull a bag of 3/4 or 6 servings already marinated and thaw and then just look through whatever sides we have available. veggies and salad or starch.

Recipe #1
Chicken Curry with Coconut Milk
little oil
medium onion, thinly sliced (i used onion flakes)
red pepper, thinly sliced (i omit)
1 lb ground chicken, crumbled
2 tsp curry powder
1/8 tsp ground cayenne pepper
can coconut milk
1/2 cup frozen peas (could use more)

cook onion and pepper in oil for 1 minute. add chicken and cook until brown and cooked through. add curry powder and cayenne. cook 30 seconds. add coconut milk and peas simmer 1 minute or until thickened (couple minutes for me). stir in 1/4 cup chopped fresh cilantro.

recipe #2
chicken quesadillas with mock guacamole.

i cook cubed chicken with a bit of grill seasoning (dh says grill seasoning is my house seasoning :giggle ) then add a can of diced chilies (4oz can - which i put through food processor, because i don't like the chunks) and just a bit (maybe 1/2 to 1 tsp) liquid smoke. i then assemble - tortilla, chicken, cheese, tortilla and bake until cheese is melted. mock guacamole - 2 cups frozen peas - thawed, 1 cup canned white beans drained, 2 cloves minced garlic, 2 tsp lime juice (lemon juice works), 1 tsp ground cumin. mash or process to desired consistency. stir in 1/4 cup fresh cilantro and salt and pepper to taste.

My quick family favs are:

Salmon Patties:

2 packages of salmon (next to the tuna in the grocery)
10 saltime crackers crumbled
2 pieces of bread shredded
1 egg

Put all this in a bowl and mix really well, form into small patties (my kids love tiny ones for fun) and roll in yellow corn meal. Cook in a 1/2 inch oil until golden brown, We serve with organic fries or tater tots or sometimes I make my own homestyle fries and salad!! So fast and yummy and easy to double or triple for larger groups.

Terriaky (sp?) Beef

1 large bottle of terriaky (sp?) sauce
1 lb of stir fry beef (cut in small strips)
1 red and green bell pepper sliced
1 can of pinapple cut up
1 purple or white onion

Put terriaky sauce and beef in crock pot all day. Save 1/4 of terriaky sauce and just before serving saute the cut up veggies in the terriaky sauce on high heat until just cooked and still a little crunchy! Serve the beef and veggie over brown rice! SOOOOOO YUMMY and SOOOOO FAST!

Here are my two faves, but you have to like bell peppers and my husband and kids don't. :doh

Papaya black beans and rice
2 tsp olive oil
1 cup red onion chopped
1/2 cup orange juice
1/4 cup lemon juice
2tbsp cilantro, I usually just put some on top and don't measure it
1/2 tsp cayenne pepper/ I usually don't add this, but we don't do a lot of hot things
1 cup red bell pepper finely chopped
1 cup green bell pepper finely chopped
1 medium papaya, peeled, seeded, and diced
2 garlic cloves minced
2 15 oz can black beans, rinced and drained
6 cups hot cooked brown rice/ I usually only add 4 cups of rice

Heat oil in large skillet over medium heat. add all ingredients except beans and rice. Cook for 5 minutes, stirring occasionally until bell peppers are crisp-tender. stir in beans. cook about 5 minutes or until heated through. Serve over rice.


Black bean salad with corn
1/4 cup apricot preserves
3 tbs lime juice
1 tbs olive oil
1 tsp salt
1/2 tsp black pepper
1/2 tsp chilli powder
1 cup cooked corn kernels, cooled
1/2 small head iceberg lettuce about 2 cups torn/ I cheat and use shredded lettuce from the store
1 medium red bell pepper diced
1 16 oz can black beans, drained and rinsed
1 15 oz can lima or butter beans, drained and rinsed
1 jalapeno chile pepper seeded, finely chopped. / also don't use this. found it to be way to spicy
1tbs cilantro
tortilla chips

In lrg bowl whisk the preserves, lime juice, olive oil, salt, pepper, and chilli powder. Add corn lettuce, bell pepper, black beans, lima or butter beans, chile pepper, and cilantro. Toss lightly to blend and serve over tortilla chips.
