I just could not resist this recipe when I heard it - I have this bag of Splenda from when it first came out and I thought it was okay, and it was on major sale :O...so anyway, couple that with a jar of natural peanut butter that was given to me for free, and voila, you have the makings of a crazy chemistry experiment that has made me sick. :sick

I lady at church told me about this sugar free pb cookie recipe - 1 c Splenda, 1 c pb, 1 egg, 1 tsp. vanilla. You mix it up and flatten with a fork and bake at 350 for 12-14 minutes. I added some salt too. It made 14 cookies. They actually taste pretty good, but when you consider you are eating straight pb and Splenda they are hardly low in calories. I ate 4 of them and now I feel gassy and puke-y. :sick Just a warning - don't try this at home!!! :sick

I think I will take them and give them to that lady tomorrow (we both work at our church). :P~

i make them 1c sugar, 1c peanut butter, and 1egg, definately not low cal (the splenda would help the calorie content) but they are good and cheap for cookies....i rarely make em though cause of nik's allergy, just have for get togethers and such

:yes I was thinking, couldn't I just make these with sugar, same no-flour principle? Or even molasses and pb to make it healthier. It would be good for gluten-free people (we're not gluten-free, but we're sure Splenda free now!!!). :sick :sick :sick

I bet molasses would be good in these...or maybe it would make it too liquidy? Hm...if I could afford all that natural pb and molasses, I'd just experiment away! :giggle

I use natural sugar - I am always too afraid to change a recipe too much

yes, that's the only kind of sugar I usually use - the evaporated cane juice. That has more flavor to it anyway. :yes I think molasses would make it too wet. Then I'd have to add flour. Then it would totally just be pb cookies. :giggle

turbinado would probably be REALLY good, though i think that's just sugar processed differently?
ohhh...you can replace the pb w/ soynut butter...ive been wanting to try changing the eggs out w/ egg replacer, but haven't done it yet

Oh, soy nut would be good. I bet any nut butter would be good...you could use almond butter and use almond extract instead of (or with) vanilla...

And yes, turbinado sugar is just sugar that's been processed differently - it's basically a bigger crystal of white sugar and tossed with trace amounts of molasses. I think that's it anyway.
