This is how my mom used to make it when we were kids. Just made it a couple nights ago and DH (who is UBER picky) LOVED it!!!! Super easy too...
1-1.5#s of Cube steak - cut into 6ish pieces and tenderize with a mallot (or I used my rolling pin-very therapudic :giggle)
some flour on a plate, seasoned with salt and pepper
Heat a pan and coat with olive oil (or grapeseed oil) on med-high heat. Dredge steaks in flour mixutre and fry on both sides. This is a thin cut, so it doesn't take long!
Remove steaks and keep warm. Make a gravy out of dripping by adding additional flour, water, S&P or whatever else you like to taste (I used a boullion cube, but those aren't dairy free I believe), maybe beef broth?
Eat with gravy over, tender and YUM! :yum
