Caramelized Onion Pot Roast

1 tablespoon olive oil
1 4 lb. boneless chuck beef roast
1 teaspoon salt
½ teaspoon pepper
6 medium onions, sliced
1 ½ cups beef broth
¾ cup beer
2 tablespoons brown sugar
3 tablespoons Dijon mustard
2 tablespoons cider vinegar

1. Heat oil in skillet over med. High heat until hot. Add beef, cook 10 minutes or until browned on all sides. Sprinkle with salt and pepper.
2. Place onions in slowcooker. Place the beef on onions. In bowl, mix rest and pour over beef/onions.
3. Cover and cook on low 8 to 10 hours.
4. with slotted spoon, removed beef and onions from slow cooker, cut beef into slices.
5. if desired, skim fat from beef juices and serve the juices as an accompaniment.

mmm, that sounds delicious. I'm definitely going to try it.

But here's my lazy side, do you HAVE to cook the beef on a skillet before putting it in the crock pot? What's the benefit of that?

Searing the meat will seal in the juices.

I've skipped this step before and it still came out okay, but the liquid was fatty.

It's much much better if you do sear the meat first, trust me! Then the juices stay in the meat and the cooking liquid will soften the browned part to perfect falling apart goodness. Did I explain it well enough?

very interesting. I never sear the meat. I just throw the whole raw thing in the crock pot. Maybe I've been missing out on something delicious. I will try it that way next time. :yes Thanks. :heart
